Does this mean amazed or amazing, Astonished or astonishing, etc... the example sentence says astonishing but the definition says amazed.

H there! this means "surprised, amazed, astonished". In that example sentence, "astonishing" is "令人惊奇". 令人惊奇 literally means "making people feel astonished". Hope this explanation makes sense! :)
