It would be appropriate to use 汗水 (hànshuǐ) to describe a situation in which someone is sweating due to physical exertion or heat. For example, one might say "他跑步时出了很多汗水 (tā pǎobù shí chūle hěnduō hànshuǐ)" to describe a person running and sweating. It would not be appropriate to use 汗水 (hànshuǐ) to describe a situation in which someone is feeling nervous or anxious, as this would be better described with a different word, such as 紧张 (jǐnzhāng).
