This is not poached egg, even though most dictionary says 荷包蛋 is poached egg, its actually very inaccurate.
荷包蛋 is fried on a flat pan using a bit oil, so we should put "fried egg (usually both sides)", especially referring to one that is fried on both sides, but not necessarily.
As for poached egg, ther is another entry for it.
